This Simple Vegan Red Lentil Curry uses one of my go-to foods to cook for dinner when I am short on time and do not have any beans or lentils already cooked. Split red lentils cook very quickly in about 15 minutes and quite nutritious.
I was attempting to make a sweet potato “cheese” sauce, but accidentally ended up with something too thin and liquid which instead made a great cheesy sweet potato soup. The cheesy flavor comes from the nutritional yeast. I added green peas to boost the protein content and make a thicker creamier soup.
