A creamy vegan sweet potato cheese soup made using 3 main whole food ingredients, perfect for eating cold or hot as an at home or on-the-go nutritious meal.
- 2 medium sized sweet potatoes
- 1 cup +1/2 cup if needed of liquid (water, low sodium veggie broth or non-dairy milk of choice)
- 1/4 cup nutritional yeast
- 1 cup cooked green peas, from canned, fresh or frozen Optional
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 tsp iodized salt or any type of salt Optional
- squeeze of lime or lemon Optional
Cook whole sweet potato (using any method, such as baking or boiling) until very soft and mushy.
Remove skin and mash, blend or food process sweet potato flesh, while adding in liquid of choice little by little, until a smooth mixture forms. For thicker soup, add less liquid and for thinner soup, add more liquid.
Add and mix in remaining ingredients. I food processed everything together, Alternatively, you can add and mix in the green peas after everything else is combined if you want to keep them whole for more chewiness in the soup or if you don't have a blender or food processor, but the soup will come out less thick and creamy.
