  • 1 cup dry red split lentils, rinsed and sorted
  • 2 cups veggie broth OR water
  • 1 tbsp curry powder
  • 1/4 tsp salt (optional, to taste)
  1. Add all ingredients into a large pot and stir to combine.

  2. Place pot on stovetop and bring to a quick boil.

  3. Then turn down the heat to a simmer (low-medium heat, slight bubbling), with the lid slightly tilted on top of the pot and cook for 15 minutes or until lentils are cooked through, stirring occasionally to prevent the curry from boiling over.
